CALLING ALL BREAD LOVERS!!!

Bread is delicious, especially when there is sugar in the picture. I know, personally, the comforts of having a mid-day sweet snack, and muffins are one of my top favorite forms of carbohydrates.

However, after committing to a Paleo-based diet, I learned that my muffin addiction—and it was an addiction—had to be broken. My blood sugar and digestion were suffering from all the refined sugar and short chain carbohydrates that I was eating.

On my road to better health, I decided that totally cutting out my favorite foods was not necessary, and ever since I have been figuring out new ways to eat the foods I love while still healing my body.

Here are three delicious muffin recipes that are easy on the tummy and easy to take on-the-go. They are gluten free, wheat free, refined sugar free, and still delicious!

Enjoy!

Ingredients you will need for the base:

2 cups of coconut flour
1 cup of arrowroot flour
1 tsp. of baking soda
1 dash of pink Himalayan salt
5 organic, cage-free eggs
1/2 cup of agave syrup
1/2 cup of monkfruit sugar
1/2 cup of melted coconut oil
3 cups of sweetened coconut milk

You will also need:

2 regular muffin pans
30 muffin liners
Non-stick spray (I use coconut oil spray)
4 mixing bowls

First, combine the dry ingredients into a large mixing bowl and mix until thoroughly combined. Then add the eggs, sweeteners, coconut oil and coconut milk. Mix thoroughly.

Separate this mixture into three equal portions into smaller mixing bowls.

BERRY BASIC MUFFINS

In mixture #1, add the following ingredients:
2 handfuls of blueberries
2 handfuls of raspberries



CINNAMON SPICE MUFFINS

For mixture #2, you will need:
2 tsp. of powdered cinnamon
1 apple (Fuji, Gala, or Honeycrisp works well)
First, peel the apple and then remove the core. Then finely chop or grate the apple and add both ingredients to the mixture.



NUTTY CARROT

For mixture #3, you will need:
2 handfuls of pecans or walnuts
5 baby carrots
After washing the carrots, finely chop or grate them and add both ingredients to the mixture.



After adding the muffin cups into the pans and spraying them, pour the three mixtures separately into the pans, not combining them. Cook at 350 degrees for 45 minutes or until cooked thoroughly. Use a toothpick to check their progress.
